Raspberry and vanilla protein loaf

Can’t resist the carby deliciousness of bread? Well, you needn’t say no to this macro-friendly Raspberry Vanilla loaf, created by baking pro Elkie Chiu. Perfect as a midday snack or an on-the-go breakfast option, this tasty loaf is packed with 8g of protein and just 2.7 carbs per slice. Layer on some of our delicious Carb Killa® spread and, voila! Protein loaf

Method

Start by preheating the oven to 160°c

While the oven is preheating, melt the coconut oil and set it aside. Also, line a loaf tin with baking paper

Next, combine the protein powder, coconut flour, almond flour, sweetener and baking powder in a large bowl

Then, add in the egg whites, the egg, the Carb Killa® shake and vanilla extract. Mix all of this together until the mix is smooth. Once mixed, add in the melted coconut oil and stir

After this, gently fold in 2/3 of the raspberries into the batter. Pour the batter into the prepped loaf fin and gently smooth over the top. Then place the remaining raspberries on top of the loaf, pressing them down into the batter

Bake for approx 30-35 minutes

After baking, leave your loaf to cool. Once cooled, cut into 10 slices and serve! Why not top with our delicious Carb Killa® spread for extra indulgence?
